Hey guys! Recently I purchased a couple of new cookbooks (yay for $5 books at Kmart) and I’ve been super excited to try this whole ‘cooking’ thing out. Those who know me know that I don’t have a lot of kitchen experience. Spaghetti bolognese is about the only dinner meal that I know how to cook off the top of my head. Seeing as my boyfriend and I are planning on moving out together this year, I figured I better up my game so that I know how to cook at least as many meals as he does (maybe more, but we’ll see whether or not I blow the kitchen up first).
Another thing is that I’ve been on a bit of a health-bender, probably like everyone else at this time of year. Even though I haven’t made any specific new year resolutions, I’ve somehow found myself watching a lot of health videos and feel inspired to make a bit more of an effort. Not only that, but I am sort of maybe possibly thinking about going vegan, or at least adopting a whole foods plant-based diet, because it seems to be the best way to avoid heart disease, cancer, and acne. Not to mention it helps the animals and the environment too. Win-win for everyone I guess, except for my boyfriend who is not impressed by the idea of me cooking meatless meals – soz babe.
I don’t know if the Vegan/WFPBD thing will actually happen – because I love bacon, and I love brie cheese, but I’m going to work towards at least preparing a couple of these types of meals a week and see how I go from there.
So with all that said and done, I opened my new vegetarian cookbook to page 210 and decided to get going on the Chickpea Curry with Basmati Rice. It was a hit with me (and Josh even said it was ‘pretty good for a vegetarian meal‘ so it must have been alright). The flavours are rich and spicy, without being too hot or overpowering. It was also super-easy to make, which I think is worth bonus points.
The cookbook I am using is called ‘The Vegetarian Kitchen’ and was published in 2016 by Herron Book Distributors. After this first success I am looking forward to trying more of these recipes out.
I had fun making a little video out of my experiments in the kitchen today, and figured I’d make a new section in my blog for recipes. These recipes will probably all be simple, healthy, quick, and yummy, because that’s what I’m on the hunt for and I may as well share it with you guys too. Let me know what you think!
